Chatham Rabbit: Building an FDA-Approved Processing Facility

Chatham Rabbit is a top producer of rabbit meat for restaurants and consumers. At present, Crystal has sold to more than 80 restaurants in her region. To increase efficiency, Crystal plans to construct a facility on her farm where she can process rabbits “on-demand” to deliver fresh meat to buyers in the area. Currently, the closest processing facility to her farm is about three hours away.

As of summer 2016, the new building is underway, and Crystal has invested in new packaging equipment.

Crystal hopes to be able to process rabbits from her own farm and from other farms in the area. If she is able to obtain the required permits and pass the necessary inspections, she may be able to offer area producers a way to process their meats locally and affordably.
